Late autumn ripe fruit, or rather our grandmother’s quince and pear compote? Tiny vanilla, nice acidity and the salty, mineral notes of Palandor wines come here in the finish.

After a very warm August, we harvested beautiful yellow, sometimes overripe clusters in early September. It fermented spontaneously, spending 8 months in the barrel. It’s little residual sugar content further enhances its fruitiness.
